Pulled Oats Patties with Sun-Dried Tomatoes | Cashew KitchenIf there's one type of recipe I believe you can never have enough of, it's veggie patties. When I discovered how easy these Pulled Oats patties were to make, I honestly did a little happy dance in the kitchen haha. Cause making patties from legumes or grains can be difficult. Often they burn, or fall apart. For each successful veggie patty recipe here on the blog (black rice burgers, super green pea patties, almond neatballs, halloumi & corn patties), I've probably made 10 failed ones. But this recipe I nailed (and shot!) on the first attempt!! Ps. I have tested it more times since, so don't you worry ;-)I brought these patties to a barbecue party last night, and I think I can safely say that everyone swooned over them ;-) I asked everyone for some last-minute feedback, but no one had anything they wanted to change/add to the recipe, so I guess that means they are DONE! Spiced with oregano, thyme and rosemary and hidden pieces of salty sun-dried tomatoes, these patties pairs really nice with mediterranean summer food like greek yoghurt, salads heavy with olive oil, charred peppers and zucchini, halloumi and roasted potatoes. Preferably enjoyed in the shade under a tree while the last rays of sun trickle through the canopy.We ate the patties with all the above mentioned sides, plus grilled mushrooms, asparagus, guacamole, yoghurt sauce, toasted sesame seeds and saffron rice. I love those maximized dinner parties when everyone just brings whatever and you make a feast out of it <3Pulled Oats Patties with Sun-Dried Tomatoes | Cashew KitchenIt was a sort of goodbye party to my old workplace, an organic food store that is now closing down </3 Those of us who worked there will of course stay in touch. We've become quite a crew, and it takes more than fire us to pull us apart haha. But gosh, I'm gonna miss that store. I've had So. Many. Laughs. there over the years. Over weird customers and confused decisions made in a haze of tiredness and silly projects with colleagues to pass the time on slow days.I'll always remember that guy strolling in barefoot on an early Saturday morning, walking up to the sofas in the café, making himself comfortable and falling asleep, while tightly clutching a plastic toy car that he brought. Only to wake up about an hour later, completely confused about where he was :'D Or that guy who claimed he had a 20-year-old sourdough from Skogaholm (a famous Swedish bread company). Or that summer when I was managing the store alone and there was a storm that resulted in our entire office flooding on my first day (including the INSIDE of the safety deposit!!!)... phew. Was pretty stressed that day. And of course all the stories we've shared behind the counter and in the kitchen during stolen moments between tasks.There's something so special about the people you get to know through work, because you literally spend all days together. You get to see people's ups and downs and follow them through everything that's happening in life. At least that's how it's been for us. In between slicing bread and refilling shelves, we've talked about love, breakups, past relationships, sexuality, our creative projects, sustainability and just plain life. Plus done a great deal of gossiping, for good measure.Though I think we all feel pretty ready to move on (I quit already at the beginning of this year) there's still sadness over the fact that we can't just walk past the store to say hi anymore, or share those everyday moments in the same way. Now we have to create a new space for us to hang out. Perhaps in the garden and house where two of the girls live and where we had this barbecue party? While attempting to light the barbecue with tea candles (don't ask) and coughing from the smoke ;-) Listening to Weeknd on repeat and greedily soaking up the last rays of sun before it disappears behind the neighbors' house.That's basically how it played out last night, when we grilled copious amounts of halloumi and devoured these Pulled Oats patties while talking about our most memorable customers and moments in the store.I prepared the patties at home, and then simply reheated them in the oven for a bit before serving. Worked great! I'd say these patties are perfect to bring to the potluck, or make a batch of on Sunday night, and then eat throughout the week with various grains and veggies.Pulled Oats is a new product here in Sweden that originally comes from Finland. It's made out of 5 simple ingredients: oats, broad beans, peas, rapseed oil and salt. No less and no more. It makes so much sense to me to use the legumes and grains we have growing up here in the north when creating a plant-based protein product. I'm all for local and simple! And because Pulled Oats combine oats, beans and peas you get all the essential amino acids (proteins). Pulled Oats Patties with Sun-Dried Tomatoes

1/2 brown onion2 cloves garlic1 tbsp rapseed oilpinch of salt250 g Pulled Oats Nude8 sun-dried tomato halves3 tbsp rapseed oil + extra2 + 1/2 tsp herbs de provence (or 1 tsp oregano, 1 tsp thyme, 1/2 tsp rosemary)1 tsp cumin3 tbsp maizena (corn starch)3/4 tbsp balsamic vinegar1 egg1/2 - 1 tsp sea saltblack pepperserving suggestionsroasted potatoesa summery saladgreek/turkish yoghurt

Directions

In a large bowl, crumble the pulled oats with your hands to as small pieces as possible. Chop the sun-dried tomatoes finely and add to the bowl. If they are completely dried you might need to soak in hot water for 10 min first.Chop onion finely and mince garlic. Heat a glug of rapseed oil in a skillet and gently fry onion and garlic. When soft, add a pinch of salt and cook until translucent and fragrant. Transfer to the bowl of pulled oats.Add maizena, spices, rapseed oil, balsamic vinegar, egg, salt & pepper. Stir to combine.Form into patties (about 2-3 tbsp batter per patty) and fry in a little oil on medium low heat until crispy and browned on both sides. They will feel a bit crumbly at first, but once the egg cooks they hold together real nice.Serve with crispy roasted potatoes, salad and yoghurt drizzle, or whatever summery sides you are craving :-)Until next time,Agnes
